Split Pea and Bacon Soup
Perfect for winter with simple ingredients.

Ingredients
- 250 grams of lean thick bacon, chopped
- 150 grams of celery, chopped
- 100 grams of onion, chopped
- 200 grams of carrots, chopped
- 3 cloves of garlic
- 300 grams of yellow split peas
- 5 cups (1.2 litres) of chicken or vegetable stock
- Cooking oil spray
- Salt and black pepper
- Parsley (optional)
Method

Mix the Ingredients:
- Spray a large pot with some spray oil over a medium high heat.
- Add the bacon, fry until browned and set aside.
- Spray the pot with cooking oil spray again and add the onion, garlic, carrots and celery. Fry till softened.
- Add the split peas and stock.
- Bring to the boil, reducing heat, cover and simmer for approximately 1 hour.
- Add the bacon again for the last 20 minutes of cooking time.
- Soup is ready when peas have softened and soup has thickened.

- Taste and season as needed wih salt and black pepper.
- Serve and enjoy.

Parsley: Stir though some optional parsley for added taste.
