Pork Chops With Prosciutto, Apple and Stilton

Ingredients

  • 12 slices prosciutto
  • 4 pork chops
  • 1 small red apple
  • 75g Stilton cheese
  • 4 large rosemary sprigs
  • 1 tablespoon olive oil

Method

  1. Prepare the Ingredients:

    • Trim the fat from the pork chops
    • Core and slice the red apple
    • Crumble the Stilton cheese
  2. Prepare the Pork:

    • Lay out 3 slices of prosciutto so they overlap. Repeat so you have 4 piles of prosciutto.
    • Season the pork chops with salt and pepper.
    • Heat 1 teaspoon of olive oil in a large frying pan over high heat.
    • Sear the pork chops on both sides.
    • Place each seared pork chop on a pile of prosciutto.
    • Divide the sliced apple and Stilton between the prosciutto piles on top of the pork.
    • Wrap the prosciutto around each of the pork, apple and Stilton parcels to hold in place, securing each with a rosemary sprig.
  3. Cook the Pork:

    • Place the prosciutto parcels onto a baking tray and bake in the oven for 15 minutes, or until the pork is thoroughly cooked through.
  4. Serve:

    • Serve with mashed potato, greens and the cooking juices from the prosciutto parcels.
